For all those who are fans of my chicken taquitos - I would like you to meet their first cousin - "Chicken Quesadilla".  All the flavors from my taquitos (lightly seasoned chicken, a touch of salsa and cheddar jack cheese) folded into tortillas. (Frozen - bakes in oven in approx 15-20 minutes.) (Add on 6 or 3  two-ounce guacamole cups for $3.50 (or $1.75 for 3) more) Served with sour cream and salsa.
Family size serves 4-6: 8 quesadillas and a family portion of both sides.
Half size serves 2-3: 4 quesadillas and a half portion of both sides.
 
Side 1: Enchilada Baked Rice - Fluffy white rice tossed with red enchilada sauce and topped with cheddar cheese!
 
Side 2: Tomalito Corn-  a sweet and tender corn casserole Mexican side dish!
