My healthy never fried version of Chicken Parmesan. Savory Italian herb oven baked chicken breasts with olive oil tomato sauce and mozzarella cheese. Once hot and bubbly, you top with crispy panko for this inside out chicken parmesan. Served with both sides listed below. (Refrigerated: Bakes in approx. 20 minutes)
Family size: 6 chicken breasts (serves 4-6) and a full portion of both sides;
Half size: 3 chicken breasts (serves 2-3) and a half portion of both sides.
Side 1: Garlic Butter Linguini -garlic infused butter and a pinch of fresh herbs - perfect for serving as a kid friendly side or under the chicken parmesan. (No sauce on the pasta - only on the chicken.)
Side 2: Salted Honey Brussel Sprouts - Fresh brussel sprouts roasted tender crisp without all the brusseliness that comes with frozen or boiled! - Finished with coarse salt and sweet honey!
