A whole pork tenderloin marinated in orange, maple and a splash of soy sauce. (Refrigerated: Bakes in approx. 20 minutes)
Family Size serves 4-6 - 1.25 pound tenderloin and a full portion of both sides below.
Half Size serves 2-3 - half a tenderloin and a half portion of both sides below.
Side 1: Sweet Potato Casserole or Twice Baked Potato Casserole - if you are a true southerner and love your sweet potatoes this one's for you (brown sugar, marshmallows and pecans)- for those of us who "aren't from around here" traditional smashed potatoes with cheddar, bacon and chives.
Side 2: Spicy Squash and Shaved Brussel Sprouts - all that sweet needs a little spice - brussel sprouts and yellow squash roasted with carmelized onions, garlic and crushed red pepper.
