 This "casserole" is less of a casserole and more of a ready to bake freezer meal! Salsa and cheese covered chicken breasts over a medley of taco seasoned potatoes and sweet corn.  Finally each breast is topped with tortilla chip crumbles for a crunchy finish.  One size - 9x13 pan with 4 chicken breasts over potato medley. (Frozen: Bakes from frozen in 75 minutes.)
