This family friendly casserole features layers of seasoned pinto beans and corn on the bottom and then red enchilada sauce, all white meat chicken, monterey jack cheese and flour tortillas layered. up to the top!  Don't let the beans scare you away - this layer is on the bottom - don't like beans? - just don't scoop all the way to the bottom!
