A treat for the adults with chimichurri and plenty of vegetables and call it "chicken and rice" for the kids!" Chicken marinated in cuban spices (cumin, coriander and oregano), cilantro and fresh citrus - sliced and ready for building your own custom rice bowl.  Top with green herb Chimichurri for another level of fresh (no avocado as pictured). Family Size: Serves 4-6, with a full serving of both sides below; Half Size: Serves 2-3 with a half serving of both sides below.  (Refrigerated - bakes in approx 18-22 minutes)


Side 1 - Cuban yellow rice - fluffy rice seasoned lightly with turmeric and chicken broth then speckled with peas.


Side 2 - Roasted sweet potatoes, zucchini, and red onion, - baked until sweet and tender then topped with healthy garlic sauteed kale and cumin black beans.
