This "casserole" is less of a casserole and more of a ready to bake freezer meal! Salsa and cheese covered chicken breasts over a medley of taco seasoned potatoes, sweet potatoes, corn, zucchini, and broccoli.  Finally each breast is topped with tortilla chip crumbles for a crunchy finish.  (Large - 6 breasts 'casserole' serves 4-6 ($30) or Small - 3 breast 'casserole' serves 2-3 ($18)).  (Frozen: Bakes from frozen in 60 (small) to 90 (large) minutes.
