Savory shredded roast beef and garlic rice rolled in a flour tortilla and topped with enchilada sauce and cheddar jack cheese. Served with a mini side of cumin and lime spiked tomatoes for topping. (6 Burritos: serves 4-6, Frozen: Bakes in approx 60 minutes)  Served with both sides below.


Side 1: Mexican Vegetable Medley - fresh veggies oven roasted and lightly seasoned with cumin, paprika, chili powder and garlic. (Zucchini, green beans, corn, onion, poblano peppers)


Side 2: Mexican Pinto Beans - real onions and peppers simmered with lightly mashed pinto beans, chicken broth and a few jalapenos = beans with some real flavor!
